Homemade Sourdough Bread 🍞✨

Ingredients 🛒

500g (4 cups) bread flour or all-purpose flour
375g (1 1/2 cups) water, room temperature
100g (1/2 cup) active sourdough starter
10g (1 1/2 tsp) salt

Directions 👩‍🍳

1️⃣ Mix the dough:
In a large bowl, combine the water and active sourdough starter. Stir to dissolve. Add the flour and mix until no dry flour remains. Cover the bowl and let it rest for 30 minutes (autolyse).

2️⃣ Add salt:
Sprinkle the salt over the dough and gently mix it in with wet hands.

3️⃣ Bulk fermentation:
Over the next 4-5 hours, perform stretch-and-folds every 30 minutes:

Grab the dough from one side, stretch it up, and fold it over. Repeat from all four sides. Cover between folds.

4️⃣ Shape the dough:
After the bulk fermentation, gently shape the dough into a round or oval loaf. Place it seam-side up in a floured proofing basket (or bowl lined with a towel). Cover and let it proof for 2-4 hours at room temperature, or overnight in the fridge.

5️⃣ Preheat the oven:
Place a Dutch oven (or lidded pot) into the oven and preheat to 450°F (230°C) for at least 30 minutes.

6️⃣ Bake the bread:
Carefully transfer the dough onto parchment paper, score the top with a sharp blade or knife, and place it into the preheated Dutch oven.

Bake covered for 20 minutes.
Remove the lid and bake for another 20-25 minutes until golden and crispy.

7️⃣ Cool and serve:
Let the bread cool completely on a wire rack before slicing.
