**Ingredients:
- 2 ripe avocados, peeled, pitted, and sliced
- 2 ripe mangoes, peeled and sliced
- 3 cups arugula
- ΒΌ cup pine nuts, toasted
- Fresh cilantro leaves (optional, for garnish)
**For the Honey-Lime Dressing: - Juice of 2 limes
- 2 tbsp honey
- ΒΌ cup extra virgin olive oil
- Salt and pepper, to taste
**Instructions:
- Prepare the Dressing: Whisk lime juice and honey until the honey dissolves. Gradually whisk in olive oil until combined. Season with salt and pepper. Set aside.
- Assemble the Salad: Layer arugula in a large bowl. Top with sliced avocados and mangoes. Sprinkle toasted pine nuts over the salad.
- Add the Dressing: Drizzle the honey-lime dressing over the salad just before serving to maintain freshness.
