Thai Quinoa Salad with Fresh Herbs and Lime Vinaigrette
Ingredients:
For the Salad:
- 1 cup cooked quinoa (cooled)
- 1/2 cup shredded carrots
- 1 cup cucumber, diced
- 1/2 red bell pepper, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp fresh mint, chopped
- 1/4 cup green onions, chopped
- 1/4 cup chopped peanuts (for garnish)
For the Lime Vinaigrette: - 3 tbsp fresh lime juice
- 2 tbsp rice vinegar
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- 1 garlic clove, minced
- Pinch of red pepper flakes (optional for spice)
Steps:
- In a large bowl, combine the cooked quinoa, shredded carrots, cucumber, bell pepper, cilantro, mint, and green onions.
- In a small bowl, whisk together the lime juice, rice vinegar, soy sauce, honey, sesame oil, garlic, and red pepper flakes.
- Pour the dressing over the salad and toss gently to combine.
- Garnish with chopped peanuts and additional herbs, if desired.
- Chill for 10 minutes before serving for the best flavor.
