Hearty Beef Stew Recipe
🍲 Ingredients:
2 lbs (900g) beef stew meat (chuck roast or similar), cut into cubes
2 tbsp vegetable oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, peeled and sliced
2 potatoes, peeled and cubed
1 red bell pepper, chopped
1 green bell pepper, chopped
2 tbsp tomato paste
4 cups beef broth
1 tbsp Worcestershire sauce
1 tsp paprika
1 tsp dried thyme
Salt and pepper to taste
2 tbsp flour (optional, for thickening)
1 tbsp soy sauce (optional, for added depth)
1 tsp sugar (optional, balances flavors)
🔥 Instructions:
Sear the beef:
Heat oil in a large pot or Dutch oven over medium-high heat.
Add the beef cubes in batches, sear until browned on all sides.
Remove and set aside.
Sauté vegetables:
In the same pot, add onions and garlic. Cook until softened (about 2–3 minutes).
Stir in tomato paste and cook for another minute.
Build the stew:
Return the beef to the pot.
Add carrots, potatoes, bell peppers.
Pour in beef broth, Worcestershire sauce, soy sauce (optional), and sugar.
Season with paprika, thyme, salt, and pepper.
Simmer:
Bring to a boil, then reduce heat to low.
Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked.
Thicken (optional):
Mix 2 tbsp of flour with a bit of cold water to make a slurry.
Stir it into the stew and simmer uncovered for another 10–15 minutes until thickened.
Taste and serve:
Adjust seasoning as needed.
Serve hot with rice, mashed potatoes, or crusty bread.
