Savory Garlic Butter Steak Tips with Creamy Cheesy Rigatoni
Ingredients:

1 lb steak tips (sirloin or ribeye, cut into bite-sized pieces)

2 tablespoons olive oil

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 lb rigatoni pasta

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional, for some heat)

Fresh parsley, chopped (for garnish)

Directions:

Cook the rigatoni pasta according to the package instructions. Drain and set aside, reserving a bit of pasta water for later use.

While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the steak tips and season with salt and pepper. Cook for 4-5 minutes, stirring occasionally, until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.

In the same skillet, add 2 tablespoons of butter and melt over medium heat. Add the minced garlic, rosemary, and thyme. Cook for 1-2 minutes, until the garlic is fragrant and softened.

Lower the heat to medium-low, then pour in the heavy cream, stirring to combine. Allow it to simmer for 2-3 minutes to thicken slightly.

Stir in the mozzarella and Parmesan cheeses, allowing them to melt into the sauce. If the sauce becomes too thick, add a splash of reserved pasta water to thin it out.

Add the cooked rigatoni to the skillet and toss it in the cheesy sauce, ensuring each piece is coated.

Return the steak tips to the skillet and toss everything together. If desired, sprinkle in red pepper flakes for an added kick.

Remove from heat and garnish with fresh parsley. Serve immediately and enjoy!
