Ingredients:
Dals & Tamarind:
½ cup Chickpeas (split) 🌰
ΒΌ cup Pigeon Peas (split) πŸ›
ΒΌ cup Red Lentils πŸ”΄
1 lemon-sized ball of Tamarind πŸ‹

Spice Mix:
1 tbsp Coriander Seeds 🌿
1 tsp Cumin Seeds βšͺ
1 tsp Fennel Seeds 🌱
1 tsp Black Peppercorns ⚫

For Cooking Dal:
1 litre Water πŸ’§
1 tsp Salt πŸ§‚
½ tsp Turmeric Powder ✨
Β½ tbsp Ginger Garlic Paste πŸ§„
3 Green Chillies Paste 🌢️
1 tbsp Oil πŸ›’οΈ

To Add to Cooked Dal:
1 tbsp Kasoori Methi πŸƒ
2 tbsp Chopped Coriander Leaves 🌿
2 tbsp Chopped Mint Leaves 🌿
1 tsp Garam Masala 🌟

For Chicken Masala:
3 tbsp Oil πŸ›’οΈ
Whole Spices: 2 Bay Leaves, 4 Cloves, 2 Cinnamon Sticks, 4 Green Cardamoms, 1 Black Cardamom 🌿
1 Onion, sliced πŸ§…
1 tbsp Ginger Garlic Paste πŸ§„
500g Chicken πŸ—
1 tsp Salt or as per taste πŸ§‚
2 Tomatoes (deskinned) πŸ…
3 Green Chillies Paste 🌢️
½ tsp Turmeric Powder ✨
1 tsp Red Chilli Powder 🌢️
1 tbsp Coriander Powder 🌿
250g Bottle Gourd (lauki) πŸ₯’
Β½ cup Water πŸ’§
2 Green Chillies 🌢️

For Tadka:
2–3 tbsp Ghee 🧈
3 Garlic Cloves, smashed πŸ§„
1 tbsp Onion, chopped πŸ§…
1 tsp Red Chilli Powder 🌢️

Method:

  1. Wash & soak dals for 1 hour. ⏳
  2. Soak tamarind in 1 cup water and extract pulp. πŸ‹πŸ’§
  3. Dry roast coriander, cumin, fennel seeds, and peppercorns. Grind to a coarse powder. πŸ”₯πŸŒ€
  4. In a pressure cooker, add 1L water, soaked dals, salt, turmeric, ginger garlic paste, green chilli paste, and 1 tbsp oil. Cook on high flame till 1 whistle, then low flame for 7–8 mins. 🍲
  5. Add kasoori methi, chopped herbs, ground spices, and garam masala. Whisk to mash the dal. πŸ₯£
  6. In a pan, heat 3 tbsp oil. Add whole spices and sautΓ©. 🌿πŸ”₯
  7. Add onions and cook till golden brown. πŸ§…
  8. Add ginger garlic paste and sautΓ©. πŸ§„
  9. Add chicken and salt. Cook on high flame for 3–4 mins. πŸ—
  10. Add tomatoes, chilli paste, turmeric, red chilli, and coriander powder. Cook till oil separates. πŸ…πŸŒΆοΈ
  11. Add bottle gourd and water. Cover and cook 7–8 mins. πŸ₯’πŸ”₯
  12. Add cooked dal. Mix and bring to a boil. πŸ›
  13. Add tamarind pulp and green chillies. Cook covered for 7–8 mins. πŸ‹πŸŒΆοΈ
  14. For tadka, heat ghee, add garlic and onion. Fry till golden. Turn off heat, add red chilli powder and mix. πŸ§„πŸ§…πŸ”₯
  15. Pour tadka over dal and mix. 🧈✨
  16. Serve hot with rice, bread, or rotis & enjoy! 🍚🍞
