For the longest time, breakfast was the easiest meal for me to ignore.
Too busy. Too tired. Too rushed.
I’d grab coffee (sometimes not even that) and tell myself I’d “eat later.” Spoiler alert: later usually meant being starving, cranky, and reaching for the first unhealthy thing I could find.
But something changed.
One day, I decided to slow down just a little and actually make myself a proper breakfast. Nothing fancy. Nothing complicated. Just something warm, comforting, and filling. And wow… I had no idea how much of a difference it would make.
Now?
I don’t skip breakfast anymore.
I actually look forward to it.
Breakfast has become my quiet moment before the day gets loud. The smell of food cooking, the first bite while everything is still calm, that feeling of starting the day nourished instead of depleted—it’s a small habit that made a big impact.
What I love most is that breakfast doesn’t have to be expensive, complicated, or time-consuming to be good. A simple homemade meal can:

Make mornings feel less rushed and more intentional
Some days it’s eggs and toast.
Some days it’s potatoes, leftovers, or something slow-cooked and comforting.
Some days it’s sweet, some days savory—but it’s always worth it.
