Ingredients
Russet potatoes (1 per person)
Olive oil
Salt
Optional toppings: butter, sour cream, cheese, chives, bacon bits
Instructions
Heat oven to 425Β°F (220Β°C).
Scrub & dry the potatoes well. Poke each one 3β4 times with a fork.
Rub lightly with olive oil and sprinkle generously with salt.
Bake directly on the oven rack (or on a tray) for 50β60 minutes, until a knife slides in easily.
Fluff: Slice open, squeeze the ends to fluff the inside, add your favorite toppings.
Pro Tips
For extra crispy skin, bake straight on the rack.
Short on time? Microwave 5β6 min first, then oven 15β20 min to crisp.
