🛒 Ingredients
1 lb (450 g) ground sausage (Italian or breakfast sausage both work)
4 cups potatoes, diced (Yukon gold or russet)
1 small onion, diced
2 cloves garlic, minced
2 carrots, diced
3 cups chicken broth
1 cup milk (or half-and-half for extra creaminess)
½ cup heavy cream (optional but 🔥)
2 tbsp butter
2 tbsp flour
1 tsp paprika
½ tsp black pepper
Salt to taste
1 tsp dried thyme (or Italian seasoning)
Chopped green onions or chives (for topping)

Brown the sausage
In a large pot over medium heat, cook sausage until browned. Break it into chunks. Remove and set aside (leave a little fat in the pot for flavor).
Sauté the veggies
Add butter to the pot. Sauté onion and carrots for 4–5 minutes until soft. Add garlic and cook 30 seconds.
Make it thick & cozy
