🫑 Stuffed Pepper Soup (Easy Recipe)
✅ Ingredients (serves ~4)
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 lb ground beef or ground turkey
2 bell peppers (any color), diced
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
4 cups chicken broth or beef broth
1 tsp Italian seasoning
1/2 tsp paprika
Salt & pepper to taste
1 cup cooked rice (white or brown)
🍳 Instructions
Sauté the base
Heat oil in a big pot over medium heat. Add onion and cook 3–4 minutes until soft. Add garlic and cook 30 seconds.
Brown the meat
Add ground beef or turkey. Cook until no longer pink. Drain extra grease if needed.
Add veggies + liquids
Stir in diced bell peppers, tomatoes, tomato sauce, broth, Italian seasoning, paprika, salt, and pepper.
Simmer
Bring to a gentle boil, then lower heat and simmer 15–20 minutes until peppers are tender.
Finish with rice
Stir in cooked rice. Taste and adjust seasoning.
