🥚 Spinach & Feta Egg Muffins (Makes 10–12)
Ingredients
8 large eggs
1 cup fresh spinach, finely chopped (or frozen, thawed & squeezed dry)
½ cup feta cheese, crumbled
¼ cup milk (or cream for richer)
¼ cup onion, finely diced (optional)
1 small garlic clove, minced (optional)
Salt & black pepper, to taste
Olive oil or cooking spray for the pan
Optional add-ins (pick one or two)
Diced bell peppers
Mushrooms
Cherry tomatoes
Grated mozzarella or cheddar
Cooked bacon or turkey sausage (if you want protein boost)
Instructions
Preheat oven to 180°C / 350°F.
Grease a muffin tin well (very important so they don’t stick).
In a bowl, whisk eggs + milk + salt + pepper.
Stir in spinach, feta, onion, garlic, and any extras.
Pour mixture into muffin cups (fill about ¾ full).
Bake 18–22 minutes until set in the center and lightly golden.
Cool 5 minutes, then gently remove.
