Creamy Chicken & Dumplings

🍲 Creamy Chicken & Dumplings
Ingredients
For the soup:
2–3 cups cooked chicken (shredded or chunky)
4 cups chicken broth
1 cup milk or cream
2 tbsp butter
1 small onion (chopped)
2 cloves garlic (minced)
1 tsp salt (to taste)
½ tsp black pepper
1 tsp dried parsley
½ tsp thyme (optional)
For the dumplings:
1 cup all-purpose flour
2 tsp baking powder
½ tsp salt
½ cup milk
1 tbsp melted butter
How to Make It
1️⃣ Start the soup
In a pot or slow cooker, melt butter.
Sauté onion + garlic until soft and fragrant.
Add chicken broth, milk/cream, salt, pepper, parsley, and thyme.
Stir in the cooked chicken. Let it simmer 5–10 minutes.
2️⃣ Make dumpling dough
Mix flour, baking powder, and salt.
Stir in milk and melted butter until thick and sticky (don’t overmix).
3️⃣ Drop the dumplings
Scoop spoonfuls of dough and drop gently into the simmering soup.
Cover and cook 10–15 minutes (don’t lift the lid too much — steam cooks them!).
4️⃣ Finish
Dumplings should be fluffy and cooked through.
Taste and adjust seasoning.
🔥 Optional Upgrades
Add frozen peas or carrots for color
Stir in a little cornstarch + water if you want thicker broth
Finish with a tiny splash of lemon juice to brighten it up
