Ingredients (serves 4β6)
3β4 medium potatoes, diced small
1 cup cooked ham, diced
6β8 eggs
1β1Β½ cups shredded cheese (cheddar, mozzarella, or a mix)
Β½ cup milk or cream
1 small onion, chopped (optional)
1 tbsp oil or butter
Salt & pepper
Optional extras: bell peppers, green onions, garlic powder, paprika
Instructions (oven version)
Preheat oven to 190Β°C / 375Β°F
Cook potatoes
Pan-fry diced potatoes in oil/butter until soft and lightly golden
Add ham + onion
Toss in ham (and onion if using). Cook 2β3 minutes
Whisk eggs
Beat eggs with milk, salt, pepper, and spices
Assemble
Spread potato-ham mix in a greased baking dish
Pour eggs over
Top with cheese
Bake
25β35 minutes, until set in the middle and golden on top
Rest 5 minutes before slicing

Cook potatoes + ham in an oven-safe pan
Pour in eggs
