🧀 Cheesy Beef Stuffed Tortilla Pockets
🛒 Ingredients:
6 large flour tortillas
500g (1 lb) ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp paprika
1 tsp cumin
Salt & black pepper to taste
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ cup cream cheese (softened)
2 tbsp chopped parsley (for garnish)
2 tbsp melted butter (for brushing)
👩‍🍳 Instructions:
1️⃣ Cook the Beef
In a skillet over medium heat, cook ground beef until browned.
Add onion and garlic, cook 2–3 minutes.
Stir in paprika, cumin, salt, and pepper.
Remove from heat and let cool slightly.
2️⃣ Make the Creamy Filling
In a bowl, mix:
Cooked beef
Cream cheese
Half of the cheddar
Half of the mozzarella
Stir until well combined.
3️⃣ Assemble the Pockets
Place filling in the center of each tortilla.
Fold in sides, then roll into a square pocket (like in the picture).
Place seam-side down in a greased baking dish.
4️⃣ Add Cheese & Butter
Sprinkle remaining cheddar and mozzarella on top.
Brush tops with melted butter.
5️⃣ Bake
Bake at 190°C (375°F) for 18–22 minutes
until golden brown and cheese is melted and bubbly.
6️⃣ Garnish & Serve
Sprinkle with fresh parsley.
Let rest 5 minutes before serving.

Diced jalapeños (for spice)
Corn kernels
Cooked mushrooms
A spoon of salsa inside
