Crispy Skin Chicken (Neighbor’s Secret Trick)
Ingredients
4–6 bone-in, skin-on chicken thighs (or drumsticks)
1 teaspoon baking powder (the secret trick)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder (optional)
1 teaspoon paprika (optional)
1 tablespoon olive oil
Instructions
Pat the chicken completely dry with paper towels. This is key for crispy skin.
In a bowl, mix baking powder, salt, pepper, garlic powder, and paprika.
Lightly coat the chicken with olive oil, then sprinkle the seasoning mixture evenly over the skin.
Place the chicken skin-side up on a wire rack over a baking sheet (this lets air circulate).
Bake in a 425°F (220°C) oven for 35–45 minutes, until the skin becomes golden and crispy.
Let rest for 5 minutes, then serve.
Why the Trick Works
The baking powder raises the skin’s pH and helps it dry out in the oven, which creates that super crispy, crackly skin—almost like fried chicken but baked.
Optional Flavor Add-Ons
Lemon pepper
BBQ seasoning
Chili flakes + honey drizzle
