Grandma’s Budget-Stretch Rice
Ingredients
1 cup white rice
2 cups water or broth
1 small onion, chopped
2 tbsp butter or oil
1 bouillon cube (chicken or beef)
Salt and pepper to taste
Optional (if you have it)
1 egg
Leftover chicken, sausage, or vegetables
Garlic powder or paprika
Instructions
Rinse the rice under cold water until the water runs mostly clear.
In a pot or skillet, melt the butter over medium heat.
Add the chopped onion and cook until soft and lightly golden (about 3–4 minutes).
Stir in the rice and cook for 1 minute to lightly toast it.
Add 2 cups water or broth and the bouillon cube. Stir well.
Bring to a boil, then cover and reduce heat to low.
Simmer for 15–18 minutes until the rice is tender.
Season with salt and pepper.
Optional Grandma Trick
Crack an egg into the hot rice and stir quickly for extra protein.
Or mix in leftover meat or vegetables to make it a full meal.
