Soft Skillet Flatbread with Olive Oil & Sesame

2 cups all-purpose flour
1 tsp salt
1 tsp sugar
1 tsp instant yeast
3/4 cup warm water
1 tbsp olive oil (for the dough)
2 tbsp olive oil (for topping)
1 tbsp sesame seeds
Optional: pinch of black seeds (nigella) or dried herbs

Make the dough
In a bowl mix flour, salt, sugar, and yeast.
Add liquids
Pour in warm water and 1 tbsp olive oil. Mix until a soft dough forms.
Knead
Knead for about 8โ€“10 minutes until smooth and elastic.
Let it rise
Cover and let it rest for 45โ€“60 minutes until doubled.
Shape the breads
Divide into 4 pieces. Flatten each into a round (about ยฝ inch thick). Press dimples with your fingers.
Add topping
Brush olive oil on top and sprinkle sesame seeds.
Cook
Heat a skillet or pan over medium heat. Cook each bread 3โ€“4 minutes per side until golden with brown spots.
