📝 Ingredients (4 servings)
4 large yellow onions, thinly sliced
3 tbsp butter
1 tbsp olive oil
1 tsp sugar (helps caramelize onions)
2 cloves garlic, minced
6 cups beef broth (or vegetable broth)
½ cup dry white wine (optional)
1 tbsp flour (optional, for thicker soup)
1 tsp fresh thyme or ½ tsp dried thyme
Salt and black pepper to taste
1 baguette, sliced and toasted
1½ cups Gruyère cheese (or Swiss/Mozzarella), shredded

Caramelize the onions
In a large pot, heat butter and olive oil over medium heat.
Add sliced onions and sugar. Cook 25–30 minutes, stirring often, until onions are deep golden brown.
Add garlic
Stir in minced garlic and cook for 1 minute.
Add flour (optional)
Sprinkle flour over onions and cook 1–2 minutes, stirring.
Deglaze the pot
Pour in the white wine and scrape the bottom of the pot to release flavor.
Add broth and herbs
Add beef broth and thyme.
Simmer 15–20 minutes. Season with salt and pepper.
Prepare the bread
Toast baguette slices in the oven until crisp.
Assemble and melt cheese
Ladle soup into oven-safe bowls.
Place toasted bread on top and cover with shredded cheese.
