🧾 Ingredients
2 cups all-purpose flour
1½ cups grated carrots (about 3 medium carrots)
1 cup sugar
½ cup vegetable oil
2 eggs
½ cup milk
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
½ tsp salt
½ cup chopped walnuts or raisins (optional)

Preheat oven to 175°C (350°F) and grease a loaf pan.
In a bowl, whisk flour, baking soda, baking powder, cinnamon, and salt.
In another bowl, mix sugar, oil, eggs, milk, and vanilla until smooth.
Stir in grated carrots.
Gradually add the dry ingredients to the wet mixture and mix until just combined.
Fold in walnuts or raisins if using.
Pour batter into the prepared loaf pan.
Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
Let it cool for 10–15 minutes, then slice and serve.
🍽️ Tips
For extra moisture, add 2 tablespoons yogurt or sour cream.
Sprinkle powdered sugar on top after cooling.
