🥩 Ingredients
1 prime rib roast (about 2–4 kg / 4–8 lb, bone-in preferred)
4 cloves garlic, minced
2 tbsp olive oil or softened butter
2 tsp salt
1 tsp black pepper
1 tbsp fresh rosemary, chopped (or 1 tsp dried)
1 tbsp fresh thyme, chopped (or 1 tsp dried)
1 tsp paprika (optional)

- Bring to room temperature
Remove the roast from the refrigerator 1–2 hours before cooking. This helps it cook evenly. - Prepare the seasoning
Mix together:
garlic
olive oil or butter
salt
pepper
rosemary
thyme
paprika
Rub this mixture all over the roast. - Preheat the oven
Preheat your oven to 230°C (450°F). - Start with high heat
Place the roast fat side up on a rack in a roasting pan.
Roast for 15 minutes at 230°C (450°F) to create a crust. - Lower the heat
Reduce temperature to 160°C (325°F) and continue roasting:
Approximate cooking time:
Rare: 15 minutes per pound
Medium-rare: 18 minutes per pound
Medium: 20 minutes per pound
Best internal temperatures:
Rare: 50°C / 120°F
Medium-rare: 54°C / 130°F
Medium: 60°C / 140°F - Rest the meat
Remove from oven and let it rest 20 minutes before slicing.
This keeps the meat juicy.

In the roasting pan add:
1 cup beef broth
½ cup red wine (optional)
