Ingredients
2 eggs
2 tbsp cream cheese (softened)
2 tbsp almond flour
½ tsp baking powder
½ tsp vanilla extract (optional)

Instructions
Blend the batter
In a blender or bowl, mix eggs, cream cheese, almond flour, baking powder, vanilla, and sweetener until smooth.
Heat the pan
Warm a non-stick skillet over medium-low heat and lightly grease with butter.
Cook the pancakes
Pour small amounts of batter into the pan (they spread a little).
Cook for 1–2 minutes until bubbles form.
Flip carefully
Turn and cook another 1 minute until golden.
Serve
Top with berries, sugar-free syrup, yogurt, or a little honey.
Tips for the Best Texture
Cook on lower heat so they don’t burn.
Make small pancakes so they flip easily.
