Ingredients
1 cup sour cream
1 cup whipped topping (like Cool Whip)
1 package (3.4 oz) instant vanilla pudding mix
1 can (20 oz) crushed pineapple, drained
1 cup mini marshmallows
½ cup chopped pecans or walnuts
1 cup crushed butter crackers (such as Ritz) or granola for crunch
½ cup shredded sweetened coconut (optional)
Instructions
In a large bowl, whisk together sour cream and vanilla pudding mix until smooth.
Fold in the whipped topping until creamy.
Stir in the crushed pineapple and mini marshmallows.
Add chopped nuts and coconut (if using).
Just before serving, mix in the crushed crackers or granola for the crunchy texture.
Chill in the refrigerator for 1–2 hours before serving.
