Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar (optional)
6 tablespoons cold butter (cut into small cubes)
¾ to 1 cup buttermilk (cold)
Instructions:
Preheat oven to 220°C (425°F). Line a baking tray or lightly grease it.
Mix dry ingredients
In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
Cut in the butter
Add cold butter and use your fingers or a fork to mix until it looks like coarse crumbs.
Add buttermilk
Pour in buttermilk gradually and mix until just combined. Do not overmix—the dough should be slightly sticky.
Shape the dough
Turn onto a floured surface, gently pat into a 2 cm (¾ inch) thick layer.
Cut biscuits
Use a glass or cutter to cut rounds. Place them close together on the tray.
Bake
Bake for 12–15 minutes until golden brown.
Serve warm
Split open and add butter and jelly.
