🥔 Baked Bean & Potato Casserole
đź§ľ Ingredients (4 servings)
3–4 medium russet potatoes, thinly sliced
1 can (400–450 g) baked beans
1 cup shredded cheddar cheese
1 small onion, thinly sliced (or 1 tsp onion powder)
Salt & pepper to taste
Optional: a little olive oil or butter for richness
👩‍🍳 Instructions
Preheat oven to 180°C (350°F).
Prepare the dish
Lightly grease a ceramic baking dish with oil or butter.
Layer the potatoes
Arrange the thinly sliced potatoes evenly in the dish. Season with salt and pepper.
Add onion
Scatter sliced onion over the potatoes.
Pour the beans
Dump the canned baked beans evenly over everything.
Top with cheese
Sprinkle shredded cheddar on top.
Cover & bake
Cover with foil and bake for 45 minutes.
Uncover & finish
Remove foil and bake another 15–20 minutes until the top is golden and potatoes are tender.
🔥 Tips
Slice potatoes thin so they cook through.
Add cooked sausage, minced meat, or tuna if you want extra protein.
A pinch of paprika or garlic powder adds more flavor.
