2 tbsp olive oil
1 onion, chopped
2 carrots, sliced
2 celery stalks, sliced (optional but great flavor)
3 cloves garlic, minced
1 zucchini, chopped
1 potato, diced (for heartiness)
1 cup green beans or peas
1 can (400g) diced tomatoes (or 2 fresh tomatoes)
1.5 liters vegetable broth (or water + stock cubes)
1 tsp salt (adjust to taste)
1/2 tsp black pepper
1 tsp paprika (optional)
1/2 tsp dried thyme or mixed herbs
A handful of chopped parsley (optional, for finishing)

Sautรฉ base: Heat olive oil in a large pot. Add onion, carrot, and celery. Cook for 5โ7 minutes until slightly soft.
Add garlic: Stir in garlic and cook for 1 minute.
Build the soup: Add potato, zucchini, green beans, and tomatoes. Mix well.
Add liquid: Pour in vegetable broth. Bring to a boil.
Simmer: Lower heat and simmer for 20โ30 minutes, until vegetables are tender.
Season: Add salt, pepper, paprika, and herbs. Adjust to taste.
Finish: Sprinkle fresh parsley before serving.
