🍰 Light Yogurt Night Cake (Low Sugar, Fluffy & Simple)

2 eggs
1 cup plain yogurt (unsweetened)
3–4 tbsp sugar (or honey, to taste)
1 tsp vanilla extract (optional)
1 cup all-purpose flour (or oat flour for lighter option)
1 tsp baking powder
Pinch of salt
Optional: lemon zest or a few berries
👩‍🍳 Instructions:
Preheat oven to 180°C (350°F).
In a bowl, whisk eggs + sugar until slightly fluffy.
Add yogurt + vanilla, mix until smooth.
In another bowl, combine flour, baking powder, and salt.
Gradually mix dry ingredients into wet mixture.
Add lemon zest or berries if using.
Pour into a lightly greased small baking dish.
Bake for 25–30 minutes until golden and set.
Let cool slightly before eating.
