Ingredients
3 large eggs
3 tbsp cream cheese (or thick Greek yogurt)
1/4 tsp baking powder
Pinch of salt
Optional: garlic powder, herbs, or a little sweetener (for sweet version)
Instructions
Preheat oven to 160–170°C. Line a baking tray with parchment paper.
Separate eggs: put whites in one bowl, yolks in another.
Mix yolks with cream cheese, baking powder, and salt until smooth.
Whip egg whites until stiff peaks form (this is what makes it fluffy).
Fold gently the yolk mixture into the whipped whites. Don’t overmix or it will deflate.
Spoon into rounds on the tray (like small buns).
Bake for 20–25 minutes until golden and set.
Let cool slightly before eating—they firm up as they cool.
Tips
Eat fresh for best texture (soft and airy).
You can use them as sandwich buns or snack bread.
They’re low in carbs, but not “unlimited”—portion still matters.
