Magic Tomato Salad
π§Ύ Ingredients:
4β5 ripe tomatoes (chopped into wedges or chunks)
1 small red onion (thinly sliced)
2 cloves garlic (minced)
2 tbsp olive oil
1 tbsp vinegar (red wine or apple cider)
1 tsp sugar (optional, balances acidity)
Salt and black pepper (to taste)
1 tbsp fresh parsley or basil (chopped)
Optional: crumbled feta cheese or mozzarella

Prep the tomatoes
Place chopped tomatoes in a large bowl. Sprinkle lightly with salt and let sit for 5β10 minutes to release their juices (this is part of the βmagicβ).
Add flavor
Add sliced onion and minced garlic to the bowl.
Make the dressing
Drizzle in olive oil and vinegar. Add sugar (if using), black pepper, and mix gently.
Let it marinate
Let the salad sit for at least 10β15 minutes so all the flavors blend together beautifully.
Finish & serve
Sprinkle fresh herbs on top and add cheese if you like. Serve at room temperature.
