Crispy Foil Packet Potatoes
Ingredients (for 2-3 servings):
4 medium potatoes (Yukon Gold or red potatoes work best)
2-3 tbsp olive oil or melted butter
1 tsp garlic powder or 2 cloves fresh garlic, minced
1 tsp paprika (smoked or sweet)
Salt and pepper to taste
Optional: fresh herbs like rosemary, thyme, or parsley
Instructions:
Preheat oven or grill
Oven: 425°F (220°C)
Grill: Medium-high heat
Prep the potatoes
Wash and dry the potatoes.
Cut them into small cubes or thin wedges for extra crispiness.
Season the potatoes
In a bowl, toss the potatoes with olive oil or butter, garlic, paprika, salt, pepper, and any herbs you like. Make sure each piece is well coated.
Assemble foil packets
Tear off large sheets of aluminum foil (enough to wrap the potatoes completely).
Place a portion of the potatoes in the center of each foil sheet.
Fold the foil over and seal the edges tightly to make a packet.
Cook the potatoes
Oven: Place packets on a baking sheet and bake for 25–35 minutes, depending on potato size.
Grill: Place packets on the grill and cook for 20–25 minutes. Turn once halfway through.
Crisp them up (optional but recommended)
Open the packets carefully (steam will escape).
Spread potatoes on a baking sheet and broil for 3–5 minutes to get extra crispy edges.
Serve and enjoy
Sprinkle with fresh herbs or a little extra salt before serving. Perfect alongside garlic butter steak!
