🥩 Ingredients (7 items)
1.5–2 kg (3–4 lb) beef chuck roast
1 packet ranch dressing mix
1 packet au jus gravy mix
100 g (½ cup) unsalted butter
6–8 pepperoncini peppers
60 ml (¼ cup) pepperoncini juice (from the jar)
3–4 garlic cloves (optional but recommended)
🍲 Instructions
Prep the roast
Place the beef chuck roast in the slow cooker (no need to sear, but you can if you want extra flavor).
Add seasonings
Sprinkle the ranch dressing mix and au jus mix evenly over the roast.
Add butter & peppers
Place the butter on top of the roast, then add the pepperoncini peppers and pour in the juice.
Add garlic
Toss in the garlic cloves around the meat.
Cook
Low: 8 hours (best for tenderness)
High: 4–5 hours
Shred & serve
Once tender, shred the beef with forks and mix it with the juices.
