🛒 Ingredients:
2 large cucumbers, thinly sliced
3 medium tomatoes, cut into wedges or chunks
1 small red onion, thinly sliced
½ cup white vinegar (or apple cider vinegar)
¼ cup water
2 tablespoons olive oil
1–2 tablespoons sugar (adjust to taste)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried oregano or basil (optional)
Fresh parsley or dill (optional, for garnish)

Prep the veggies
Slice cucumbers, tomatoes, and onions and place them in a large bowl.
Make the marinade
In a separate bowl, whisk together vinegar, water, olive oil, sugar, salt, pepper, and herbs.
Combine
Pour the marinade over the vegetables and toss gently to coat everything evenly.
Chill
Cover and refrigerate for at least 1 hour (best if marinated 2–4 hours).
Serve
Toss again before serving and garnish with fresh herbs if desired.
💡 Tips:
Slice onions very thin to mellow their sharpness.
Add sliced bell peppers for extra crunch and color.
