🧀 Creamy Baked Feta & Cherry Tomato Pasta
🛒 Ingredients (Serves 4)
250g pasta (penne or spaghetti)
200g block of feta cheese
2 cups cherry tomatoes
3 cloves garlic (minced)
¼ cup olive oil
Salt & black pepper (to taste)
1 tsp dried oregano or Italian seasoning (optional)
Fresh basil (optional, for garnish)
👩‍🍳 Instructions
Preheat oven to 200°C (400°F).
In a baking dish, add cherry tomatoes and garlic. Drizzle with olive oil and season with salt, pepper, and oregano.
Place the block of feta in the center of the dish and drizzle a little more olive oil on top.
Bake for 25–30 minutes until the tomatoes burst and feta softens.
Meanwhile, cook pasta according to package instructions. Reserve a bit of pasta water.
Remove the baking dish from the oven and mix everything together until creamy.
Add cooked pasta and a splash of reserved pasta water. Toss until well combined.
Garnish with fresh basil and serve warm.
