Ingredients:
4 cups potatoes, peeled and diced
2 cups broccoli florets (fresh or frozen)
1 small onion, finely chopped
3 cups chicken broth (or vegetable broth)
2 cloves garlic, minced
1 teaspoon salt
Β½ teaspoon black pepper
1 teaspoon paprika (optional)
1Β½ cups shredded cheddar cheese
1 cup milk or heavy cream
2 tablespoons butter
2 tablespoons flour (for thickening)

Add to Crock Pot:
Put potatoes, broccoli, onion, garlic, and broth into your slow cooker.
Season:
Add salt, pepper, and paprika.
Cook:
LOW: 6β7 hours
HIGH: 3β4 hours
(until potatoes are tender)
Thicken the Soup:
In a small pan, melt butter over medium heat. Stir in flour and cook 1 minute.
Slowly whisk in milk/cream until smooth and slightly thick.
Combine:
Pour the creamy mixture into the crock pot. Stir well.
Add Cheese:
Stir in shredded cheddar cheese until melted and smooth.
Blend (Optional):
For a creamier texture, mash some potatoes or use a hand blender.
