🧾 Ingredients:
2 cups all-purpose flour
1 cup fine semolina
1 tsp salt
1 tsp sugar
1 tsp baking powder (optional, for softness)
~1½ cups warm water (as needed)
½ cup vegetable oil (for folding)
¼ cup melted butter
👩‍🍳 Instructions:

  1. Make the dough
    In a bowl, mix flour, semolina, salt, sugar, and baking powder.
    Gradually add warm water and knead until you get a soft, smooth dough (about 10 minutes).
    Cover and let it rest for 20 minutes.
  2. Shape into balls
    Divide dough into small balls (golf-ball size).
    Lightly oil them and let rest another 10 minutes.
  3. Flatten & fold (this makes the layers!)
    Oil your work surface.
    Take one ball and flatten it very thin (almost transparent).
    Brush with oil + butter mix.
    Fold into a square (like an envelope: top, bottom, left, right).
    Set aside and repeat.
  4. Cook
    Flatten each square gently.
    Cook on a hot pan (medium heat) with a little oil.
    Flip until golden and crispy on both sides.
    🔥 Tips:
    The thinner you stretch the dough, the flakier the layers.
    Use plenty of oil/butter while folding—that’s the secret!
    Serve warm with honey, cheese, or even stuffed with onions/meat.
