🥔 Depression-Era Fried Potatoes & Onions (with Bacon)
🛒 Ingredients (3 only)
4–5 medium potatoes (peeled and sliced)
1 large onion (sliced)
4–6 strips bacon
👩🍳 Instructions
Cook the bacon
In a large skillet, cook the bacon over medium heat until crispy.
Remove and set aside, but leave the bacon grease in the pan (this is key for flavor).
Cook potatoes & onions
Add sliced potatoes and onions directly into the bacon grease.
Stir to coat everything well.
Cover and cook on medium-low heat for about 15–20 minutes, stirring occasionally, until potatoes are tender and slightly crispy.
Finish the dish
Crumble the cooked bacon and mix it back in.
Cook uncovered for a few more minutes to crisp everything up.
🍽️ Tips
No need for extra seasoning—the bacon adds salt and richness.
For extra crispiness, let the potatoes sit without stirring for a few minutes at the end.
You can slice potatoes thin for faster cooking.
💡 Why this was popular
During the Great Depression, families relied on cheap, filling ingredients. Potatoes and onions stored well, and a little bacon added enough fat and flavor to make the whole dish satisfying.
