🖤🥭 Black Sesame Panna Cotta (The Mango Contrast)
🛒 Ingredients
For the black sesame panna cotta:
2 cups heavy cream
1 cup whole milk
1/3 cup sugar
3 tbsp black sesame paste (or finely ground black sesame seeds)
2 tsp gelatin powder
3 tbsp cold water
1 tsp vanilla extract
Pinch of salt
For the mango layer:
1½ cups ripe mango (pureed)
2–3 tbsp sugar (adjust to taste)
1 tsp lemon juice
1 tsp gelatin powder
2 tbsp cold water
👩🍳 Instructions
- Bloom the gelatin
In a small bowl, mix gelatin with cold water.
Let sit for 5–10 minutes until it becomes soft and spongy. - Make the black sesame base
In a saucepan, heat cream, milk, and sugar over medium heat (don’t boil).
Stir in black sesame paste and a pinch of salt. Mix until smooth.
Remove from heat, add bloomed gelatin, and stir until fully dissolved.
Add vanilla extract. - Pour and chill
Strain mixture (optional for smoothness).
Pour into serving glasses or molds.
Refrigerate for 3–4 hours until set. - Make the mango layer
Bloom gelatin in cold water (same as before).
Heat mango puree, sugar, and lemon juice gently.
Stir in gelatin until dissolved. Let cool slightly (important so it doesn’t melt panna cotta). - Add mango topping
Once panna cotta is set, pour mango mixture on top.
Chill another 1–2 hours until fully set.
✨ Tips for best results
Use very ripe mangoes for natural sweetness and color.
Tilt the glasses slightly while setting the first layer for a fancy angled look.
If you can’t find black sesame paste, grind toasted black sesame seeds with a bit of oil or honey.
