Ingredients (makes about 24 cookies)
1 cup peanut butter (smooth or crunchy)
1 cup sugar
1 egg
Optional: 1 tsp vanilla extract, pinch of salt
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix ingredients: In a bowl, combine peanut butter, sugar, and egg (and vanilla if using) until smooth.
Shape cookies: Roll into 1-inch balls and place on the baking sheet. Flatten each ball slightly with a fork, making a crisscross pattern.
Bake for 10–12 minutes, until edges are slightly golden.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
