🛒 Ingredients
1 prime rib roast (about 2–3 kg / 4–6 lbs)
4–5 cloves garlic (minced)
2 tbsp olive oil or softened butter
2 tsp salt
1–2 tsp black pepper
1 tbsp fresh rosemary (or 1 tsp dried)
1 tbsp fresh thyme (or 1 tsp dried)
🔥 Instructions

  1. Bring to room temperature
    Take the roast out of the fridge 2 hours before cooking.
  2. Season
    Mix garlic, oil/butter, salt, pepper, and herbs.
    Rub all over the meat generously.
  3. Preheat oven
    Set oven to 230°C (450°F).
  4. Initial roast (for crust)
    Place roast fat-side up in a roasting pan.
    Roast for 20 minutes to get that beautiful crust.
  5. Lower heat & cook slowly
    Reduce oven to 160°C (325°F).
    Continue roasting:
    Rare: ~15 min per lb (internal 50–52°C / 120–125°F)
    Medium rare: ~18 min per lb (55–57°C / 130–135°F)
    Medium: ~20 min per lb (60–63°C / 140–145°F)
  6. Rest (VERY important!)
    Remove from oven and let rest 20–30 minutes.
    This keeps it juicy.

    Slice against the grain.

    Roasted potatoes 🥔
    Steamed veggies 🥦
