Ingredients (for 1 cake):
4 large eggs, separated
½ cup sugar
½ cup all-purpose flour (or cornstarch for extra fluffiness)
¼ cup milk
¼ cup melted butter or neutral oil
1 tsp vanilla extract
Pinch of salt
Optional: powdered sugar for dusting, cocoa powder, or fruit for topping.
Instructions:
Preheat oven to 350°F (175°C). Line a 9-inch cake pan with parchment paper or grease lightly.
Blend wet ingredients: In your blender, add egg yolks, milk, melted butter, and vanilla. Blend for about 30 seconds until smooth.
Add dry ingredients: Add sugar, flour, and a pinch of salt. Blend again until fully combined.
Whip egg whites: In a clean bowl, beat egg whites until stiff peaks form. This gives the cake its cloud-like texture.
Fold gently: Pour the blended batter into the whipped egg whites and gently fold with a spatula until just combined. Try not to deflate the egg whites.
Bake: Pour into the prepared pan and bake for 25–30 minutes, or until the top is golden and a toothpick comes out clean.
Cool & serve: Let it cool slightly before removing. Dust with powdered sugar or top with fresh fruit if desired.
