🥔 3-Ingredient Hearty Potato Skillet (Old-Fashioned Budget Dinner)
Ingredients
3–4 medium potatoes
1 large onion
3–4 eggs
(Salt + oil/butter are usually assumed pantry basics, but optional if you want strictly 3 ingredients)
Instructions
Prep the potatoes
Peel (or leave skin on for rustic style)
Slice thin or cut into small cubes so they cook faster
Cook the potatoes
Heat a little oil or butter in a large pan
Add potatoes and cook on medium heat for 10–15 minutes, stirring occasionally
They should start turning golden and soft
Add the onion
Slice the onion and add it to the pan
Cook together until onions are soft and slightly caramelized
Add the eggs
Make small spaces in the pan and crack eggs directly in
Cover the pan and cook until eggs are set (about 5–7 minutes)
Serve
Break the yolks and mix everything together, or serve as-is for a “fancy” skillet look
Why it feels “rich”
The onions sweeten as they cook, the potatoes become crispy-soft, and the eggs make it creamy and filling—so it tastes like much more than just 3 basic ingredients.
