1 medium Onion
2ā3 tablespoons oil or butter (any cooking fat you have)

Prep the potatoes
Peel if you want (old recipes often didnāt).
Dice into small cubes so they crisp faster.
Heat the pan
Add oil or butter to a large skillet.
Heat on medium until shimmering.
Cook the potatoes first
Add potatoes in a single layer.
Let them sit 4ā5 minutes without stirring so they form a crust.
Add onions
Stir in sliced onions.
Keep cooking, stirring occasionally, until everything is golden brown and crispy (15ā25 minutes).
Finish crispy
Press down lightly with a spatula for extra browning.
Cook a few more minutes until edges are crunchy.
