Ingredients
2 medium Zucchini
2 tbsp olive oil
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (optional but makes them extra crispy)
1 tsp garlic powder
1/2 tsp paprika (optional)
Salt & black pepper to taste
Instructions

  1. Prep the zucchini
    Slice zucchini into thin rounds (about 1/4 inch thick).
    Pat dry with paper towels to remove excess moisture (important for crispiness).
  2. Season coating
    In a bowl, mix Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Coat
    Lightly brush zucchini slices with olive oil.
    Press each slice into the Parmesan mixture until well coated.
  4. Cook (choose one)
    🔥 Oven method
    Preheat oven to 220°C (425°F)
    Place slices on a baking sheet lined with parchment paper
    Bake 20–25 minutes, flipping halfway, until golden and crispy
    🔥 Air fryer method (best crisp)
    Air fry at 200°C (390°F)
    Cook 10–12 minutes, shaking halfway
    🍽️ Tips for extra crunch
    Don’t overcrowd the pan
    Use freshly grated Parmesan (not powdered)
    Salt zucchini AFTER baking if you want maximum crispiness
