120 ml milk (1/2 cup)
120 ml oil (1/2 cup, any neutral oil)
200 g flour (about 1½ cups)
1 tbsp baking powder
Pinch of salt
Optional:
Lemon zest or orange zest
Chocolate chips or raisins
Powdered sugar (for topping)

Mix eggs & sugar
In a bowl, whisk eggs, sugar, and vanilla until light and slightly fluffy (about 2 minutes).
Add liquids
Pour in milk and oil. Mix well.
Add dry ingredients
Sift in flour, baking powder, and salt. Stir until smooth (don’t overmix).
Flavor it (optional)
Add zest, chocolate chips, or raisins if you like.
Cook quickly (choose one method):
