🍋 Bright & Soft Lemon Yogurt Cake

1 cup plain yogurt
1 cup sugar
3 eggs
½ cup vegetable oil
1½ cups all-purpose flour
2 tsp baking powder
Zest of 1 lemon
2 tbsp fresh lemon juice
Pinch of salt

1–2 tbsp lemon juice
👩‍🍳 Instructions
Preheat oven to 180°C (350°F). Grease a small cake pan.
In a bowl, whisk together yogurt, sugar, and eggs until smooth.
Add oil, lemon zest, and lemon juice. Mix well.
In another bowl, combine flour, baking powder, and salt.
Gradually fold dry ingredients into wet mixture until just combined.
Pour batter into the pan.
Bake for 30–35 minutes until golden and a toothpick comes out clean.
Let cool slightly.
Optional: Drizzle with lemon glaze for that extra “bright” flavor.
