Old-Fashioned Nana’s Rice Pudding
Ingredients
3/4 cup white rice
2 cups water
4 cups whole milk
1/2 cup sugar
1/4 tsp salt
2 eggs
1 tsp vanilla extract
1 tsp cinnamon
1/2 cup raisins (optional)
2 tbsp butter
Instructions
In a saucepan, bring the rice and water to a boil.
Reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
Stir in milk, sugar, and salt.
Cook over low heat for 25–30 minutes, stirring often, until thick and creamy.
In a bowl, whisk eggs. Slowly add a little hot pudding mixture to temper the eggs.
Stir egg mixture back into the pot.
Add vanilla, butter, cinnamon, and raisins if using.
Cook 2–3 more minutes until silky and thick.
Serve warm or chilled with extra cinnamon on top.
