Ingredients:
For the Salad:

  • 1 cup cooked quinoa (cooled)
  • 1/2 cup shredded carrots
  • 1 cup cucumber, diced
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh mint, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup chopped peanuts (for garnish)
    For the Lime Vinaigrette:
  • 3 tbsp fresh lime juice
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • Pinch of red pepper flakes (optional for spice)
    Steps:
  1. In a large bowl, combine the cooked quinoa, shredded carrots, cucumber, bell pepper, cilantro, mint, and green onions.
  2. In a small bowl, whisk together the lime juice, rice vinegar, soy sauce, honey, sesame oil, garlic, and red pepper flakes.
  3. Pour the dressing over the salad and toss gently to combine.
