๐ฅ๐ฅ Family-Favorite Potato & Bacon Soup
๐งพ Ingredients
6 slices bacon, chopped
1 medium onion, diced
2 cloves garlic, minced
4โ5 medium potatoes, peeled and diced
3 cups chicken broth
1 cup milk (or half-and-half for extra creaminess)
ยฝ cup heavy cream (optional but amazing)
2 tbsp butter
2 tbsp flour
Salt & black pepper, to taste
ยฝ tsp paprika (optional)
For topping (optional but recommended):
Shredded cheddar cheese
Chopped green onions
Extra crispy bacon
๐ฉโ๐ณ Instructions
Cook the bacon in a large pot over medium heat until crispy. Remove bacon and set aside. Leave about 1โ2 tbsp bacon fat in the pot.
Sautรฉ onion in the bacon fat until soft (3โ4 minutes). Add garlic and cook 30 seconds.
Add potatoes and broth. Bring to a boil, then reduce heat and simmer 15โ20 minutes until potatoes are very tender.
In a small pan, melt butter, whisk in flour, and cook 1 minute. Slowly whisk in milk to form a smooth mixture.
Pour milk mixture into the soup, stir well, and simmer 5 minutes until thick.
Add cream (if using), cooked bacon, salt, pepper, and paprika.
Mash slightly with a potato masher for a chunky-creamy texture (or blend if you prefer smooth).
