6 slices bacon, chopped
1 medium onion, diced
2 cloves garlic, minced
4โ€“5 medium potatoes, peeled and diced
3 cups chicken broth
1 cup milk (or half-and-half for extra creaminess)

2 tbsp butter
2 tbsp flour
Salt & black pepper, to taste

Cook the bacon in a large pot over medium heat until crispy. Remove bacon and set aside. Leave about 1โ€“2 tbsp bacon fat in the pot.

Add potatoes and broth. Bring to a boil, then reduce heat and simmer 15โ€“20 minutes until potatoes are very tender.
