🥦🧀 Cheesy Cauliflower Fritters
Ingredients
1 medium cauliflower (cut into florets)
2 eggs
1 cup shredded cheese (mozzarella, cheddar, or a mix)
½ cup breadcrumbs (or flour)
2 tbsp grated Parmesan (optional but 🔥)
2 cloves garlic, minced
2 tbsp fresh dill or parsley, chopped
Salt & black pepper to taste
Paprika or chili flakes (optional)
Oil for frying
Instructions
Cook cauliflower
Boil cauliflower florets in salted water until very soft (about 10 minutes).
Drain well and mash (no big chunks).
Make the mixture
In a bowl, mix mashed cauliflower, eggs, cheese, breadcrumbs, Parmesan, garlic, herbs, salt, pepper, and paprika.
Form fritters
Scoop spoonfuls and gently shape into small patties.
Fry
Heat oil in a pan over medium heat.
Fry fritters 3–4 minutes per side until deep golden and crispy.
Drain & serve
Place on paper towels. Garnish with extra herbs.
Serving Ideas
Dip in garlic yogurt sauce, sour cream, or spicy mayo
Serve as a snack, side dish, or meat-free dinner
Tips
Too soft? Add more breadcrumbs
Want baked? Bake at 200°C (400°F) for 20–25 min, flipping once
Extra crispy? Use panko breadcrumbs
