Ingredients
1 whole chicken (cut up) or 6–8 bone-in chicken pieces
3 tbsp olive oil or melted butter
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp garlic powder
½ tsp onion powder
½ tsp dried thyme or oregano
Optional: potatoes, carrots, onions (for the pan)
Instructions
Preheat oven to 375°F (190°C).
Lightly grease a baking dish or roasting pan.
Pat chicken dry and place skin-side up in the pan.
Drizzle with oil or butter and rub all over.
Mix seasonings together and sprinkle generously on both sides.
Add potatoes, carrots, or onions around the chicken if using.
Cover loosely with foil and bake 30 minutes.
Remove foil and continue baking 25–35 minutes, until golden and juices run clear.
Optional: Broil 2–3 minutes for extra crispy skin.
