Creamed Chipped Beef (SOS)
Ingredients
1 jar (2.5–3 oz) dried chipped beef
2 tablespoons butter
2 tablespoons all-purpose flour
1½ cups milk (whole milk is best)
Black pepper, to taste
Toast or biscuits, for serving
Instructions
Prep the beef
Rinse the chipped beef under warm water to remove excess salt.
Pat dry and roughly chop into bite-size pieces.
Make the roux
Melt butter in a skillet over medium heat.
Whisk in flour and cook for 1 minute (don’t let it brown).
Add milk
Slowly whisk in milk, stirring constantly until smooth.
Cook 3–5 minutes until thick and creamy.
Add beef & season
Stir in chipped beef.
Add plenty of black pepper (this dish loves pepper).
Taste before adding salt—usually none needed.
Serve
Spoon generously over toasted bread or split biscuits.
Eat immediately while hot and creamy.
